①租金：

充分使用场地面积和时间，多时段场景经营

出租场地展览，早点等，

淡季或低峰时促销或其它经营。

②原料：

从原料的购买―→运输－→验收――贮存―→领料―→加工―→炒至―→销售，有制度标准对每个环节层层控制

③采购：

现在厨师只要求贵。只要求适合这个菜肴才是好的，多联系几个专业提供各种原料的供货商以求得低价

④运输：

多用常用可批发一次购起，可送货上门

验收―→贮存―→领料，严格按照制定的标准程序操作

⑤加工：

对各种鲜料、干货规定加工方法、时间、出数量、质量，以提高净料率和效率，

杜绝不够技术人员加工贵原料，否则追究责任。

对加工后的下脚料做员工餐或出新菜或做当日特价菜，控制加工量以免变质浪费。

⑥配菜：

严格按照标准的菜谱卡上的数数量，品种抓配。

⑦炒锅：

见量多、量少不下锅，减少增加后再炒，以免浪费时间和原料。炒坏菜肴要负责，投放指定调料，不得乱放乱用调料和原料

⑧销售：

无单不出菜，不炒菜。用四联单点菜，防走单，漏单。

多了的宴席，乘余的菜品把主料挑出保存好，下次适时用掉

⑨员工数量和工资：

定人、定菜，定标准，合理安排岗位，做到人尽其才，物尽其用，如：定油锅、水锅，烧菜锅，白汁爆炒锅、汤锅、素菜锅，等。

这样降低了技术标准（工资）且保证了质量。还加快了速度（减少了人员）工作又轻松，且容易内部培差上手既减少外聘的高薪又调动了员工的积极性。

前厅服务员、点菜员、卫生员，收台员，传菜员，迎宾、收银，咨询分工明确。

⑩水电气：

杜绝细水长流和急流水、冲洗及不合理用水，如：解冻，灶头水应采用自然解冻和漂洗，灶头水满后及时关及时开

未开餐之前只开一两组灯，一组排风、一组鼓风一组进风，用来加工原料。

应集中加工原料，11：20左右开始点长明火，不炒菜时及时关火，留长明火，开餐结束后及时关掉不用的机组

蒸箱开餐前不用时不点尽量晚点，

11、设施设备：

正确使用和维护培训，用完后及时清理。采用专人、专设备、专维护。

顾客事故处理。争取用合适的方法降低亏损且让客人满意，（见投诉处理标准）。减少税金
